CULINARY - AMERICA THE MELTING POT - (Grades 5-10)


Chef Katie will take the participants on an American Culinary Adventure!! All recipes use quality sustainable ingredients and are prepared completely from scratch. Class 1 - American BBQ (Baked Wings and Side Salad); Class 2 - Comfort Foods (Oven Roasted Chicken, Mac and Cheese, Corn Bread); Class 3 - Pizza and Garlic Knots; Class 4 - Pie Day (Blueberry and Key Lime).

CULINARY - FARM TO FORK (Grades 5 -Adults)

Chef Katie's Farm to Fork classes will focus on locally produced farm fresh ingredients.  This 3 hour workshop will begin with the popular Caprese Salad, fresh jersey tomatoes, basil and mozzarella.  Dressing made from scratch will accompany this dish perfectly. Spaghetti squash is the perfect accompaniment to the salad, this squash is rich in protein and has far fewer carbs than pasta.  This meal will be made complete with a Sweet Corn Cake (Jersey Corn) with cinnamon whipped cream.

COOKING - FARM TO FORK (Grades 5-Adults) 


Chef Katie's Farm to Fork classes will focus on locally produced farm fresh ingredients.  This 3 hour vegetarian workshop will begin with making tomato sauce out of fresh jersey tomatoes.  You will learn how to spiralize vegetables to make a wonderful healthy spaghetti noodle. Meatballs (all vegetable ingredients) will accompany the dish.  There will be plenty of tomato sauce to take home.

COOKING - SUSHI MAKING (Grades 5-10)


Chef Katie will teach traditional Japanese techniques and flavor profiles for the perfect sushi making.  Students will make shrimp tempura with mango and avocado rolls, sweet potato tempura with cucumber and scallions rolls and veggie fried rice.  All recipes are from scratch.

PICKLEBALL - FALL EVENING SESSION

  
Pickleball is a combination of tennis, ping-pong and badminton.  It is played on a court like tennis but half the size, with a wiffle ball and paddles.  Pickleball is TONS of fun and easy to learn for beginners for more information, rules and videos, go to www.usapa.org.  There is no instruction in this program.  It is open play.

Missy has also had extensive USTA playing experience and specializes in singles and doubles strategy.
